Jean-Claude Mas, first-generation winemaker, fourth generation grape grower, and owner of Les Domaines Paul Mas, is a leader in fine winemaking in the Languedoc region of Southern France. Since taking the helm of the family winery in 2000, he has prioritized sourcing the highest quality grapes from twelve privately-owned estates and premier growers in the Languedoc to make wines of authenticity and refinement. Very elegant notes of red berries (strawberry, cherry) combined with soft spices and a hint of vanilla. Medium-bodied wine with ripe tannins and a well-balanced acidity.
Vines grow on clay and limestone soils with gravel.
Destemming. Malolactic fermentation occurs in barrels. The wine is then aged in oak barrel for six months. Skin contact maceration occurs for three days at 50°F in order to extract color and aromas. The fermentation takes place in temperature-controlled stainless-steel tanks with selected yeast at 77°F maximum and is followed by skin contact maceration for ﬁve days. Malolactic fermentation occurs in barrels.
The wine is aged in oak barrels for six months.
