Vinification
Grapes were mechanically harvested at night to prevent oxidation and preserve fruit. After destemming, each variety was vinified separately, with 3 days skin contact at 10°C. Fermentation lasted 6 days at 24–26°C with daily pumping, followed by 15-day maceration for Cabernet and 12 days for Merlot in stainless steel (max 24°C).
Aging
25% aged 6 months in new American oak, 75% in stainless steel, then 2 more months in vats before bottling.
