Tasting Notes

Pale straw yellow in color, this wine offers fresh citrus and stone fruit aromas, leading to a soft yet persistent palate balanced by crisp acidity.

Typically September.

Vinification

The must, obtained by very soft pressing, undergoes an initial fermentation at a controlled temperature of 10°C (50°F). The base wine is transferred into pressurized stainless steel tanks where the wine is made sparkling using the traditional Charmat method.

Aging

4-6 months in stainless steel tanks before transferred to bottle via Charmat Method.

Col Solivo is a custom-blended Prosecco created by Charles Lazzara in partnership with Fattoria Il Palagio in the hills of Treviso, designed to deliver high-quality bubbles at an accessible price point. Born from an extensive period of blending and tasting, the wine achieves a balanced, creamy profile with delicate bubbles and vibrant aromas of green apple, lemon zest, and spring flowers, alongside notes of ripe pear, citrus, and a hint of almond and vanilla. Just slightly off-dry, Col Solivo is crafted for effortless enjoyment, making it ideal for Bellinis, mimosas, and leisurely brunch occasions. The wine reflects a hands-on, relationship-driven approach and is ultimately a Prosecco made for sharing, celebrating, and keeping on hand by the case.
