Tasting Notes
Cabernet heavy, so look for more intensity and some lifted mid-pallet thanks to oak aging. The wine is complex and pairs with all sorts of dishes, but you'll really just hammer this back on your own.
Cultivation
The vines are 15-25 years old and are planted on clay, limestone and gravel soils. These vineyards are managed with total respect to the environment.
Vinification
Skin contact at 50°F for 3 days prior to 6 days fermentation at 75-78°F. This includes daily pump overs followed by a 9 day maceration for the Cabernet and 8 days for the Merlot under temperature control (75°F max). The blend is made in November before putting the wine in barrels.
Aging
25% of the blend is aged in new oak barrel for 4 months. The other 75% are matured in stainless steel vats. After taking the wine out of the barrels it is aged for a further 2 months in vats prior to bottling.
Paul Mas wines are the result of a symbiotic relationship between an extraordinary region for producing wines, passion for the vineyard, respect for the grapes during vinification, and great blending and aging knowledge.
Paul Mas 1892 wine is a tribute to Raymond Mas, Jean-Claude’s grandfather. It commemorates his way of farming the vineyard, without using any chemical products, as well as his traditional way of making wine, respecting the fruit of the vineyard. His hard work and appreciation of the artful techniques enabled him to create his wines.
