Tavernello is the flagship brand of Caviro, an agricultural cooperative that sources its grapes from more than 10k individual winemakers across seven regions in Italy, providing opportunities for small, passionate farmers across the country. Tasting Notes
Pale straw yellow in appearance. Aromas of white peach, pear, grapefruit, and citrus. Light-bodied on the palate, with a subtle mineral finish.
Cultivation
Harvested in early September.
Vinification
Destemmed and traditionally pressed. Fermentation takes place in 300 – 1600hl tanks at 18 °C for 8-10 days. The wine is stored in stainless steel tanks for 3-4 months before bottling.
