Tasting Notes

Bright ruby red with orange reflexes. Gentle bouquet of flowers and spices. On the palate, it is dry and elegant, with delicate tannins and good structure for long aging.

Cultivation

Typically, the first week of October.

Vinification

Spontaneous fermentation with autochthonous yeast and in stainless steel vats. Automatic temperature control system via water circulation. 12-21 days maceration. Once fermentation is complete, the wine remains in contact with the grape skins for a further week. After the first racking, malolactic fermentation takes place in concrete tanks.

Aging

Aged for 36 months in 15 hl. oak barrels, followed by an additional 12 months minimum in the bottle.

Perched atop the Lirano hill at the edge of the Barolo appellation near Serralunga, the 23-hectare Rivetto estate is a living, breathing ecosystem shaped by Enrico Rivetto, a farmer at heart whose passion for the land defines everything he does. The first and currently only Demeter-certified estate in Barolo and Barbaresco, Rivetto’s commitment to biodynamic farming has deepened his understanding of his vineyards, where Nebbiolo rows are interwoven with hedges, trees, medicinal herbs, vegetable gardens, orchards, a rainwater-fed pond, composting areas, and surrounding centuries-old woods. Enrico’s sometimes unconventional choices—such as dedicating valuable acreage to donkeys whose manure nourishes the soils—reflect his singular focus on strengthening the land, allowing each element of the estate to support the others and, in turn, produce wines that have earned growing international acclaim.
