Tasting Notes
Gentle spice, dense cherry, and red berry aromas from a well balanced vineyard boasting fewer stones and a natural spring running 4 meters below the vineyards. A bit more generous on fruit and still very seriously structured.
Cultivation
Organic cultivation with grapes from Salicutti's 3 vineyards: 60% from Sorgente (slightly later ripening, giving freshness, red fruit, fine tannins), 20% from Piaggione (giving structure, floral notes, fine tannins), and remaining 20% from Teatro (cool microclimate, lending notably ethereal, intensive, and complex character).
Vinification
Fermented in cement at controlled temperatures with native yeasts, followed by a 35-day maceration to build structure and depth. Gently pressed using a hydraulic press and completed with malolactic fermentation for softness and balance.
Aging
22 months in Mittelberger 10 hl, followed by 3 months in bottle.
Podere Salicutti, Montalcino’s first certified organic estate, was founded by Francesco Leanza and carefully transitioned to legendary Munich restauranteurs Felix and Sabine Eichbauer, who have guided its evolution toward biodynamic practices while honoring the land’s natural rhythms. The estate’s 11 hectares of Sangiovese, spread across three adjoining vineyards—Teatro, Sorgente, and Piaggione—sit at 420–500 meters with ideal sun exposure, airflow, and marne-rich soils that enhance ripening and concentration. Salicutti’s Brunello di Montalcino reflects the individuality of each plot, combining purity, structure, and a deep expression of terroir.
