Tasting Notes
Very elegant notes of red berries (strawberry, cherry) combined with soft spices and a hint of vanilla. Medium-bodied wine with ripe tannins and a well-balanced acidity.
Cultivation
Vines grow on clay and limestone soils with gravel.
Vinification
Destemming. Malolactic fermentation occurs in barrels. The wine is then aged in oak barrel for six months. Skin contact maceration occurs for three days at 50°F in order to extract color and aromas. The fermentation takes place in temperature-controlled stainless-steel tanks with selected yeast at 77°F maximum and is followed by skin contact maceration for five days. Malolactic fermentation occurs in barrels.
Aging
The wine is aged in oak barrels for six months.
Paul Mas wines are the result of a symbiotic relationship between an extraordinary region for producing wines, passion for the vineyard, respect for the grapes during vinification, and great blending and aging knowledge.
Paul Mas 1892 wine is a tribute to Raymond Mas, Jean-Claude’s grandfather. It commemorates his way of farming the vineyard, without using any chemical products, as well as his traditional way of making wine, respecting the fruit of the vineyard. His hard work and appreciation of the artful techniques enabled him to create his wines.
