Tasting Notes

Gold color with hints of roasted peanut, cereals, and spices on the nose. Lingering tannic finish with pleasant savory sensations.

Cultivation

Starts in mid-September, by hand, with very ripe grapes that are high in residual sugars and polyphenols.

Vinification

Powerful extraction forces come into play through the use of the traditional wine press to create musts loaded with color and high dry extracts. Fermentation takes place in cement vessels, marked by continuous micro-oxygenation, which continues even after fermentation, preparing the wine for its encounter with alcohol.

Aging

Aged in singular, old casks for 16 years, moving position in the cellar along the way, followed by 3 months in bottle. 1.5 micron filtration.
